Carrot pumpkin garlic Soup

  • Cut the pumpkin into quarters so that they are a manageable size to work with
  • Scoop out the seeds and peel the skin.
  • Then chop the pumpkin flesh and carrot into small chunks and cook in boiling water until soft.
  • Meanwhile, add the chili, garlic, salt and pepper to a blender and whiz until well blended.
  • When the pumpkin and carrot becomes soft, then drain the cooking water but reserve it in a pan.
  • Add cooked pumpkin into the blender with the chili mix and blend.
  • Transfer the mixture back into a saucepan.
  • If it is too thick, then use some of the reserved cooking water to adjust its consistency.
  • Serve in a large bowl and garnish it with chopped coriander.
